Deep-Frying Spring Rolls
Pour enough oil into a deep pot or wok to submerge the spring rolls, and heat it to 350°F (175°C). If you’ve made your own spring rolls, ensure they are tightly rolled and sealed with a bit of water or cornstarch slurry (a mix of cornstarch and water) to prevent them from opening during frying. Carefully lower the spring rolls into the hot oil, a few at a time to avoid overcrowding. Fry for 2-3 minutes, turning occasionally, until they are golden brown and crispy. Use a slotted spoon to remove the spring rolls from the oil and place them on a plate lined with paper towels to drain excess oil. Serve the spring rolls hot with dipping sauce.
