The white "fat" parts of this meat have a very strange texture. They're firm compared to the "meat" part. Almost too firm, like eating cartilage or squid. Not very appetizing, and not like the fat you would expect on pork belly.
The meat parts are quite good, have a good, soft, chewy texture that sort of has fibres like real pork. It has a noticeable sweet taste like lap chong so you will need to cook it in sauce. I liked toasting it with sugar and soy sauce.
The description recommends boiling it in water. Don't do this unless you boil it in a very flavorful broth. Otherwise it will taste like warm water. It also gets a lot softer in water which means it loses a lot of the meaty chewiness.
Overall, I do not recommend as I ended up having to cut out the white layer to enjoy it.
